Goody good stuff!

Here at delightful-cakes we often make cupcakes which include sweets as children love them! In fact we all do!
So with our healthy new year resolutions now in place we think that goody good stuffs sweets are delightful! dairy free, egg free, gelatin free, fat free and suitable for vegans and vegetarians its a wonder that we have never heard from them before!

We had an opportunity to try these lovely sweets and it goes without saying that even though the sweets are much better for you than normal sweets we still had our doubts as to whether they would taste good too! Well they did! They were a lot less chewier than normal sweets, softer almost like the worms and other animals that the natural confectionery company do! Soft sweet and to die for! Would recommend the sweets to parents of children or people who want to put better things into their body as they DO taste good and are good!
With this in thought our cupcake 'Candy Heaven' could definitely do with a healthier version so we would substitute the candy we use with Goody good stuffs sweets - Koala gummy bears and the Cheery Cherries!

To make your own use the following! Makes 12 cupcakes

3 medium eggs at room temperature
150g Butter
150g Caster sugar
150g Self raising flour
1 tsp Vanilla extract

For the frosting -
200g Butter
400g Icing sugar
1 Bag of Goody good stuff Cheery Cherries
1 Bag of Goody good stuff Koala Gummy Bears

Add the butter and sugar to the bowl and cream until light and fluffy.
In a separate bowl whisk together the eggs and vanilla extract making sure air is being incorporated as you whisk.
Sieve the flour into another separate bowl and then add the flour and egg into the mixture together a little at a time to avoid curdling.
Once all the ingredients have been added add a little mixture into the 12 prepared cupcake cases and bake at 180c for 15-20 minutes!

For the frosting - TIP: Sieve icing sugar first then add the butter and mix together until creamy - if mixture is too runny keep in fridge for about 30mins! Pipe onto the cupcakes or spread (up to you) and the finish of with the Goody good stuff sweets!

Recipe of the day - Chocolate brownies

Delightfully delicious!

Ingredients -

• 275g/10oz plain chocolate (70% cocoa solids)
• 275g/10oz unsalted butter
• 85g/3oz milk chocolate, cut into large chunks
• 85g/3oz white chocolate, cut into large chunks
• 175g/6oz plain flour
• 1 tsp baking powder
• 4 large eggs, lightly beaten
• 1 tsp vanilla essence
• 325g/12oz caster sugar 
  
  
  What to do  -    1 -

Preheat the oven to 170C/325F/Gas3. Line a 30x20x3.5cm/12x8x1½in tin with lightly buttered greaseproof paper or foil.
Put the plain chocolate and butter in a large bowl, place over a pan of simmering water and allow to melt.
Sieve the flour and baking powder into a bowl and set aside. Remove the melted chocolate from the heat and stir in the sugar. Add the eggs and vanilla essence. Fold in the flour, nuts and chocolate.
Pour the chocolate mixture into the prepared cake tin. Place in the oven and bake for 20-25 minutes. The top should be firm but the inside should feel soft when cooked. Allow to cool in the tin. Remove the brownies from the tin and cut into squares.

We have created a new logo for our website which you will see around! It has a D and a C at the top which somehow looks slightly like a kiss from first glance and the our name underneath in the font 'Corner Store' which is our sites signature 'look'! We hope you like?

Baby shower was a hit!

As you know we were selected to bake 24 cupcakes for a baby shower! We had such fun making these delicious treats which were for a boy! They featured baby prams, bottles, dummies, feet and little banners that said "Baby boy" and "It's a boy" this picture above was taken by the host of the party and they had placed them on their own stand which made them really stand put! We think they looked delightful and delightful cakes is happy to have been apart of it!

Delightful cakes is very excited about catering for our first ever baby shower at the beginning of december it was a special request of a friend but the baby shower cupcakes will be up at the beginning of december on our website for everyone to order!

What have we been up to?

We got to thinking about how creamy and tasty white chocolate is and thought about making a cupcake dedicated to the white dreamy stuff! Here on our 'Food for thought' we voiced our thoughts to you but now we went ahead and created it! Take a look !
