
So with our healthy new year resolutions now in place we think that goody good stuffs sweets are delightful! dairy free, egg free, gelatin free, fat free and suitable for vegans and vegetarians its a wonder that we have never heard from them before!
We had an opportunity to try these lovely sweets and it goes without saying that even though the sweets are much better for you than normal sweets we still had our doubts as to whether they would taste good too! Well they did! They were a lot less chewier than normal sweets, softer almost like the worms and other animals that the natural confectionery company do! Soft sweet and to die for! Would recommend the sweets to parents of children or people who want to put better things into their body as they DO taste good and are good!
With this in thought our cupcake 'Candy Heaven' could definitely do with a healthier version so we would substitute the candy we use with Goody good stuffs sweets - Koala gummy bears and the Cheery Cherries!
To make your own use the following! Makes 12 cupcakes
3 medium eggs at room temperature
150g Butter
150g Caster sugar
150g Self raising flour
1 tsp Vanilla extract
For the frosting -
200g Butter
400g Icing sugar
1 Bag of Goody good stuff Cheery Cherries
1 Bag of Goody good stuff Koala Gummy Bears
Add the butter and sugar to the bowl and cream until light and fluffy.
In a separate bowl whisk together the eggs and vanilla extract making sure air is being incorporated as you whisk.
Sieve the flour into another separate bowl and then add the flour and egg into the mixture together a little at a time to avoid curdling.
Once all the ingredients have been added add a little mixture into the 12 prepared cupcake cases and bake at 180c for 15-20 minutes!
For the frosting - TIP: Sieve icing sugar first then add the butter and mix together until creamy - if mixture is too runny keep in fridge for about 30mins! Pipe onto the cupcakes or spread (up to you) and the finish of with the Goody good stuff sweets!
